Multiple Forms of Pectinesterase are Present in Tomato and Other Fruit

Pectinesterase causes cloudiness in processed orange juice, and is therefore of commercial significance.

From the data obtained, there appear to be two isoforms of PE in orange peel & pulp as well as in lemon peel. Orange peel appears to contain less PE total activity than pulp - interestingly this is the opposite of the situation in lemon (Graph 2).
