Multiple Forms of Pectinesterase are Present in Tomato and Other Fruit
Strawberry


The dominant isoform (Graph 5, fractions 24-34) elutes from the column in a similar
position to tomato PE2. Minor isoform(s) of PE in strawberry are just about visible in
fractions 45-48, so these also elute from the column in much the same position as tomato PE1 and PE3. It could therefore be inferred
that the PE isoforms of strawberry are similar to their tomato counterparts.
Levels of PE in strawberry increase during the green to early ripe stages of ripening.
This, together with the apparent lack of other cell wall degrading enzymes such as
polygalacturonase, could mean that PE has an important role in the ripening of strawberry.
